This is a dish that stretches really far when feeding a crowd. It’s great as a side dish or you can make it a full meal by adding chicken, salmon, or cubed tofu. Serve with chopsticks and everyone will have fun slurping up this fun and easy lunch or dinner recipe!

Ingredients:
Take a look around your pantry for these ingredients before starting this delicious meal.
- Lo mein noodles– chow mein noodles, egg noodles, rice noodles, or even spaghetti would work.
- Olive oil- Avocado or vegetable oil would also work.
- Garlic– You can replace this with 1 teaspoon garlic powder.
- Baby Bella mushrooms– Any sliced mushroom will work.
- Red bell pepper– You could also use green, orange, yellow, or a combination of all three.
- Carrots
- Snow peas– Regular peas would work here too.
- Baby spinach– Fresh is best but if all you have is frozen, make sure to completely thaw and squeeze out as much water as possible.
- Reduced sodium soy sauce – dark soy sauce or light soy sauce both work.
- Granulated sugar– Brown sugar would work or even maple syrup or honey. Keep in mind that you may have to use more to achieve the sweetness you desire.
- Sesame oil
- Ground ginger– You could use fresh too.
- Sriracha– You could use crushed red pepper flakes or your favorite hot sauce if you don’t have sriracha or leave this out entirely if you don’t like spice.
- Worcestershire sauce– Fish sauce would work great here too.

The sky is the limit! Consider adding any of these ingredients to this easy Lo Mein recipe:
- Chicken
- Beef
- Pork
- Broccoli
- Bean sprouts
- Cabbage
- Oyster sauce
- Green onion
- Sesame seeds to garnish

Recipe:
Cook the noodles. Cook lo mein according to package directions and set aside.
Sauté the veggies. In a large skillet over medium-high heat, heat the olive oil and garlic over medium heat until fragrant and soft. Then add your mushrooms, red pepper, carrot, snow peas and spinach. Give them a stir and continue to cook until wilted and soft and set aside.

Make the sauce. In a small bowl, whisk soy sauce, sugar, sesame oil, ginger, sriracha, and Worcestershire sauce until the sugar is dissolved.
Combine. Add the sauce to the pan and stir before adding the lo mein noodles.

Toss and serve. Add the noodles to the vegetables and toss to coat evenly with sauce. Best served hot.


Storage
Leftover lo mein noodles can be stored in your refrigerator in an airtight container for 3-4 days. If you know that you won’t be able to eat all of your leftovers in 3-4 days, place them in an airtight container or resealable bag and lay them flat in the freezer. You’ll be able to defrost them in the fridge and reheat them whenever you want. Lo mein noodles can be stored in the freezer for 3-4 months.
To reheat, you can put individual servings in your microwave on high for a minute or you can even reheat this yummy meal on the stove in a large pot over low heat making sure to stir often until it is reheated.
