Egg breakfast cups are a low carb breakfast recipe made in muffin cups and can be a healthy breakfast idea! Consider adding vegetables like spinach or mushrooms to the egg muffins.

- Sices of deli ham
- Large eggs
- Shredded cheddar cheese
- Pepper to taste
- Optional: parsley or green onions
Supplies:
- Muffin pan
- Non-stick cooking spray
- Skillet
Instructions:
You can swap out the protein with your protein of choice. Consider a slice of ham or turkey or whatever meat and flavor you love! Preheat the oven to 375 degrees, whisk the whole egg (egg whites and egg yolks), and scramble them in a skillet.
At this point, you can stir in any extra seasonings or ingredients you enjoy into the egg mixture, like tomatoes, garlic powder, basil, etc. Spray the muffin tin with non-stick spray.
Fit the ham slices into the muffin tin with them hanging over too much. Tuck the ham around the cupcake tin so that it resembles the shape of a cupcake liner.

Freezer Instructions
Simply make the Ham and Egg cups as usual, then, toss them in the freezer. When you are ready for them, just heat them in the microwave for a few seconds and they are ready to go.
Storing Leftovers
Store the leftover egg cups in an airtight container in the refrigerator for 3-4 days.

- 6 eggs
- ½ cups shredded cheddar cheese
