Egg breakfast cups are a low carb breakfast recipe made in muffin cups and can be a healthy breakfast idea! Consider adding vegetables like spinach or mushrooms to the egg muffins.
- Sices of deli ham
- Large eggs
- Shredded cheddar cheese
- Pepper to taste
- Optional: parsley or green onions
- Muffin pan
- Non-stick cooking spray
You can swap out the protein with your protein of choice. Consider a slice of ham or turkey or whatever meat and flavor you love! Preheat the oven to 375 degrees, whisk the whole egg (egg whites and egg yolks), and scramble them in a skillet.
At this point, you can stir in any extra seasonings or ingredients you enjoy into the egg mixture, like tomatoes, garlic powder, basil, etc. Spray the muffin tin with non-stick spray.
Fit the ham slices into the muffin tin with them hanging over too much. Tuck the ham around the cupcake tin so that they resemble the shape of a cupcake liner.
Fill the ham cups with scrambled eggs and top them with shredded cheese. Bake for 10 minutes until the cheese is melted.
Simply make the Ham and Egg cups as usual, then, toss them in the freezer. When you are ready for them, just heat them in the microwave for a few seconds and they are ready to go.
Store the leftover egg cups in an airtight container in the refrigerator for 3-4 days.

- Muffin tin pan
- Non-Stick spray
- Wooden spoon or spatula
- 6 slices of deli ham
- 6 eggs
- ½ cups shredded cheddar cheese
- pepper to taste
- Preheat the oven to 375°
