  • Baby back ribs
  • Garlic salt – If you’re looking for a low-sodium meal, use garlic powder instead.
  • Onion powder
  • Smoked paprika – For a less smoky flavor profile, you can use regular or sweet paprika.
  • Black pepper
  • Chili powder
  • Cayenne pepper – If you prefer a milder flavor, leave this out. It can be a bit spicy.
  • Olive oil – Use any oil that you prefer. Olive oil has a great flavor, but avocado oil, canola, or vegetable oils work great too.
  • BBQ sauce – Any flavor of BBQ sauce will work with this recipe, but I really love hickory or brown sugar. You can also use your own homemade sauce if you have a recipe that you love.
  • Minced roasted garlic
  • Worcestershire sauce

Prepare your oven and baking sheet. Preheat your oven to 350°F and line a baking sheet with parchment paper.

Remove the Silverskin. Use a small paring knife to separate the silverskin membrane on the underside of the ribs. Use a paper towel to grip the loosened silverskin and peel it completely off the bone side of the ribs. Place them on your prepared baking sheet.

Make the spice mixture. In a small bowl, combine the garlic salt, onion powder, smoked paprika, pepper, chili powder, and cayenne pepper, and sprinkle the seasoning mixture evenly over both sides of the ribs.

Cover with foil and bake

Drizzle with oil. Drizzle both sides with oil and rub the seasoning into the meat. Cover the baking tray and ribs with aluminum foil and bake for 2 hours.

Make the BBQ sauce. While the ribs cook, combine the barbecue sauce, minced roasted garlic, Worcestershire sauce, honey, and red pepper flakes.

Increase the oven temperature. Remove the ribs from the oven and increase the oven temperature to 450°F.

Brush with sauce

Broil. For the final 3-5 minutes of cooking, set your oven to broil on medium-high heat to lightly char the meat and caramelize the sugars in the sauce. This step is optional.

Rest and serve

Rest and serve. Allow the meat to rest for 10 minutes before slicing so the juices have a chance to reabsorb into the meat. Slice and serve warm.

Baby Bake ribs vs. Spare ribs.
You can use either. The difference is that baby back ribs come from higher up in the ribs, are smaller (hence the baby name, not from baby pigs), and are more tender. Spare ribs are from the lower rib cage, are bigger, and more fatty, which gives them a nice flavor and tenderness.
