Bailey’s S’mores Float

This is such a great treat, and can be made non-alcoholic if desired, or for a kid-friendly modification! With a S’mores-inspired rimmed glass, and topped with yummy, toasted marshmallows, this float has the perfect balance of chocolate milk to Baileys Irish Cream.

Ingredients:

  • chocolate syrup
  • crushed graham crackers 
  • vanilla ice cream 
  • chocolate milk
  • Baileys Irish Cream 
  • marshmallows

Place some chocolate syrup and crushed graham crackers on two individual small, shallow plates to rim your glasses. Dip your glass upside down in the chocolate syrup and then into the crushed graham crackers. Set aside the crushed graham cracker for optional garnish.

Scoop 3 scoops of ice cream in each glass. Add chocolate milk and Baileys into each glass. Finish the floats with 3 large marshmallows. Garnish with some additional graham cracker crumbs and chocolate syrup if desired.

Can I leave out the Baileys and make this non-alcoholic?

Absolutely! You can omit the Baileys completely or if you are still looking to have the Baileys flavor without the alcohol, try Bailey’s non-alcoholic coffee creamer found in most grocery stores.  

Could I make the float dairy-free?

Yes. Keep in mind that this will alter the flavor because you will have to use Baileys Almande (almond milk Baileys). Replace the chocolate milk with your favorite dairy-free option as well as dairy-free ice cream!

Servings: 4 floats

Equipment

  • Measuring cups
  • Measuring spoons
  • Two Small Shallow Plates
  • 8 ounce Serving Glasses 
  • Ice Cream Scoop 
  • (Optional: Creme Brulee Torch)

Ingredients 

  • chocolate syrup
  • ½ cup crushed graham crackers
  • 12 scoops vanilla ice cream 
  • 1 cup chocolate milk
  • 6 ounces Baileys Irish Cream 
  • 12 large marshmallows

Instructions 

  • Place some chocolate syrup and crushed graham crackers on two individual small, shallow plates to rim your glasses.
  • First dip your glass upside down in the chocolate syrup and then into the crushed graham crackers. Discard the chocolate syrup plate but set aside the crush graham cracker for optional garnish.
  • Scoop 3 scoops of ice cream in each glass.
  • Add ¼ cup of chocolate milk and 1 ½ ounces of Baileys into each glass.
  • Finish the floats with 3 large marshmallows and brown with a crème brulee torch (optional). If you do not have one, you can place the marshmallows in the oven very briefly on broil, just until they start to brown. Pro tip: You want to use a torch that browns quick, or you will melt your ice cream! Or brown them prior to putting them in your glass.
  • Garnish with some additional graham cracker crumbs and chocolate syrup if desired.
