Tater Tot Casserole Directions:

Step 1: Brown the beef
In a skillet over medium heat, cook the ground beef until no longer pink. Drain any grease.

Step 2: Add flavor
Stir in the taco seasoning and the can of Rotel (undrained). Let it simmer for about 2โ€“3 minutes so the flavors combine.

Step 3: Layer in the Crock Pot
Spray your slow cooker with nonstick cooking spray.

  • Spread half of the tater tots evenly on the bottom.
  • Add the taco beef mixture on top.
  • Sprinkle 1 cup of shredded cheddar cheese over the beef.
  • Add the remaining tater tots on top.

Step 4: Slow cook to perfection
Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the tater tots are golden and heated through.

Step 5: Melt the cheese
Sprinkle the remaining 1 cup of cheddar cheese over the top, cover, and cook an additional 10โ€“15 minutes until melted and bubbly.
