Tater Tot Casserole

This Taco Tater Tot Casserole is a cheesy, family-friendly dinner made with ground beef, taco seasoning, Rotel, and crispy tater tots. Perfect for Taco Tuesday or any busy night!

Ingredients
  

  • 1 lb ground beef browned and drained
  • 1 oz packet taco seasoning
  • 10 oz can Rotel (diced tomatoes with green chilies, undrained)
  • 2 cups shredded cheddar cheese divided
  • 32 oz bag frozen tater tots

Instructions
 

  • Brown the beef. In a skillet over medium heat, cook the ground beef until no longer pink. Drain any grease.
  • Add flavor. Stir in the taco seasoning and the can of Rotel (undrained). Let it simmer for about 2-3 minutes so the flavors combine.
  • Layer in the Crock Pot. Spray your slow cooker with nonstick cooking spray.
  • Spread half of the tater tots evenly on the bottom. Add the taco beef mixture on top. Sprinkle 1 cup of shredded cheddar cheese over the beef. Add the remaining tater tots on top.
  • Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the tater tots are golden and heated through.
  • Sprinkle the remaining 1 cup of cheddar cheese over the top, cover, and cook an additional 10-15 minutes until melted and bubbly.
