Tater Tot Casserole
This Taco Tater Tot Casserole is a cheesy, family-friendly dinner made with ground beef, taco seasoning, Rotel, and crispy tater tots. Perfect for Taco Tuesday or any busy night!

- 1 lb ground beef browned and drained
- 1 oz packet taco seasoning
- 10 oz can Rotel (diced tomatoes with green chilies, undrained)
- 2 cups shredded cheddar cheese divided
- 32 oz bag frozen tater tots
Brown the beef. In a skillet over medium heat, cook the ground beef until no longer pink. Drain any grease.
Add flavor. Stir in the taco seasoning and the can of Rotel (undrained). Let it simmer for about 2-3 minutes so the flavors combine.
Layer in the Crock Pot. Spray your slow cooker with nonstick cooking spray.
Spread half of the tater tots evenly on the bottom. Add the taco beef mixture on top. Sprinkle 1 cup of shredded cheddar cheese over the beef. Add the remaining tater tots on top.
Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until the tater tots are golden and heated through.
Sprinkle the remaining 1 cup of cheddar cheese over the top, cover, and cook an additional 10-15 minutes until melted and bubbly.
