Peanut Butter and Jelly Cookie Bars
These easy-to-make bars come together in minutes! The hardest part is waiting for the pan to cool before cutting it into cookie bars.
Ingredients
- All-purpose flour
- Granulated sugar
- Baking powder
- Butter, softened
- Eggs, lightly beaten
- Jelly, flavor of choice
- Reese’s peanut butter chips (like THESE)
These Peanut Butter and Jelly Cookie Bars are soft and chewy. These bars are a delicious way to turn a favorite childhood sandwich into a dessert! They make a perfect dessert, bake sale treat, potluck dessert, or after-school snack.
Peanut Butter and Jelly Cookie Bars Recipe
- Preheat the oven to 375 degrees F.
- Combine the flour, sugar, and baking powder in the bowl of a stand mixer with a paddle attachment.
- Add the butter in chunks and mix until a coarse crumble forms.
- Mix in the beaten eggs.
- Add half of the mixture to the bottom of a greased 9×13 casserole dish and press down with palms to make it even and flat.
- Spread the jelly into an even layer on top of the crust.
- Sprinkle the peanut butter chips over the jelly, followed by the remaining cookie crumble.
- Bake for 30 minutes.
Allow the cookies to cool completely before cutting them into squares. Serve them with a cold glass of milk! Store the bars in an airtight container at room temperature for up to 3 days. They will last a couple of days longer when stored in the refrigerator.
