Peanut Butter and Jelly Cookie Bars! Made with your favorite peanut butter pieces, these PB&J Bars turn a classic sandwich into a yummy cookie treat! Peanut Butter and Jelly Cookie Bars

These easy-to-make bars come together in minutes! The hardest part is waiting for the pan to cool before cutting it into cookie bars.

Peanut Butter and Jelly Cookie Bars

Ingredients

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Butter, softened
  • Eggs, lightly beaten
  • Jelly, flavor of choice
  • Reese’s peanut butter chips (like THESE)
Ingredients

These Peanut Butter and Jelly Cookie Bars are soft and chewy. These bars are a delicious way to turn a favorite childhood sandwich into a dessert!  They make a perfect dessert, bake sale treat, potluck dessert, or after-school snack.

Peanut Butter and Jelly Cookie Bars Recipe

  • Preheat the oven to 375 degrees F.
  • Combine the flour, sugar, and baking powder in the bowl of a stand mixer with a paddle attachment. 
  • Add the butter in chunks and mix until a coarse crumble forms. 
  • Mix in the beaten eggs. 
Assembling Cookie Bars
  • Add half of the mixture to the bottom of a greased 9×13 casserole dish and press down with palms to make it even and flat. 
  • Spread the jelly into an even layer on top of the crust. 
  • Sprinkle the peanut butter chips over the jelly, followed by the remaining cookie crumble. 
  • Bake for 30 minutes.

Allow the cookies to cool completely before cutting them into squares. Serve them with a cold glass of milk! Store the bars in an airtight container at room temperature for up to 3 days. They will last a couple of days longer when stored in the refrigerator.

    I have made these for years at Christmas time. they were my Mom’s favorite.
    when she passed away in 2011, I stopped making them for a while. Thank you for having the recipe available. They are back in our Christmas celebration again!
