No-Bake Chocolate Chip Cookie Bars

Take your favorite chocolate chip cookies and turn them into edible refrigerated no-bake cookies! The cookie flavors and creamy tastes come together to make this a great summer dessert or anytime treat!

Ingredients:

  1. Light brown sugar
  2. Salted butter
  3. Vanilla bean paste or vanilla extract
  4. All-purpose flour
  5. Mini semi-sweet chocolate chips
  6. Dark chocolate chips
  7. Heavy whipping cream

Substitutions

If you are using unsalted butter, simply add 1 ½ teaspoons of salt to the batter.

Optional: Top with a pinch of coarse sea salt.

Instructions:

Stir together the brown sugar and butter in a large mixing bowl using an electric hand mixer until smooth and creamy. Add the vanilla bean paste again and mix for about 30 seconds to incorporate it into the creamed butter.

Gently whisk in the flour with the electric mixer on a low speed until it is fully incorporated into the mixture. Fold in the mini chocolate chips using the hand mixer or a spatula and ensure that they are evenly distributed throughout the dough.

Press the dough in an even layer into a square baking pan and set aside. 

Recipe Tip

Using mini chocolate chips helps distribute the chocolate throughout the bars more evenly.

In a small microwave-safe bowl, combine the dark chocolate chips and heavy cream. Melt the chocolate in the microwave at 25-second intervals until they are completely melted.

Pour the chocolate mixture over the dough and allow the bars to sit in the fridge for 4 hours.

Chill Time

In order for the bars to hold their shape, it is important to let them chill in the fridge for at least 4 hours.

Ingredients 

  • ¾ cup light brown sugar
  • 1 cup salted butter
  • 1½ teaspoon vanilla bean paste OR 2 tablespoons of vanilla extract
  • 1½ cups all-purpose flour
  • 1 cup mini semi-sweet chocolate chips
  • 1 cup dark chocolate chips
  • ½ cup heavy whipping cream

Instructions 

  • Whisk together the brown sugar and butter in a mixing bowl using an electric hand mixer until smooth and creamy.
  • Add the vanilla bean paste again and mix for about 30 seconds to incorporate it into the creamed butter.
  • Gently whisk in the flour with the electric mixer on a low speed until it is fully incorporated into the mixture.
  • Fold in the mini chocolate chips using the hand mixer or a spatula and ensure that they are evenly distributed throughout the dough.
  • Press the dough into an 8"x8" baking dish and set aside. 
  • In a small bowl, combine the dark chocolate chips and heavy cream. Melt the chocolate in the microwave on 25 second intervals until they are completely melted. 
  • Pour the chocolate mixture over the dough and allow the bars to sit in the fridge for 4 hours.
  • Cut into bars and enjoy!

Notes

Storage:
Store these bars in the fridge for up to one week. Because there are no eggs in the bars, they last longer than regular cookies would.
