  • Colby Jack cheese – you could use cheddar cheese if you don’t like Colby.
  • Shredded Muenster cheese – If you can’t find shredded Muenster, you can use mozzarella or cheddar.
  • Rotel, drained- If Rotel is hard to find, use 2 parts diced tomatoes and 1 part sliced cooked green chilies. You’ll need a total of 10 ounces. 
  • Worcestershire sauce – This adds a slightly savory, umami flavor that makes this dip hard to resist.
  • Garlic powder
  • Onion powder
  • Cayenne pepper – This is optional for an added kick of spicy heat.
  • Salt– Feel free to add this to taste
  • Black pepper
  • Chives– Optional, but looks great, tastes yummy, and adds some freshness to this rich dip. 

Step 1: Brown the Sausage

In a large skillet over medium heat, cook the ground sausage until fully browned. Drain excess grease.

In a large mixing bowl, combine softened cream cheese and sour cream. Stir until smooth and creamy.

  • 1 pound ground sausage
  • 1 8-ounce package cream cheese, well softened
  • 1 ½ cups sour cream
  • 1 ½ cups shredded Colby Jack cheese
  • 1 cup shredded Muenster cheese
  • 1 10-ounce can Rotel, drained
  • 1 ½ Tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 Tablespoon sliced chives

Instructions 

  • Preheat your oven and prepare your baking dish. Preheat oven to 350°F and spray an 8×8 baking dish with non-stick cooking spray.
  • Brown the sausage. In a large, heavy-bottomed skillet over medium heat, add the sausage, breaking it up into small pieces with a wooden spoon or spatula until it’s browned on the outside and cooked throughout. This should take about 8-10 minutes. Drain the excess grease from the pan and set the sausage aside.
  • Prepare the base of the dip. In a large mixing bowl, combine the cream cheese, sour cream, shredded cheeses, Rotel, Worcestershire sauce, garlic powder, onion powder, cayenne pepper, salt, and black pepper, mixing until well combined.
  • Add the sausage. Fold in the cooked sausage and spread the dip into the prepared 8×8 baking dish.
  • Bake. Bake uncovered for 30 minutes or until hot, bubbly, and starting to brown on top.
  • Garnish and serve. Garnish with sliced chives and serve hot with dippers such as tortilla chips, sliced baguettes, or crackers.

Storage & Reheating:
Refrigerator: Store leftovers in an airtight container up to 3 days.
Reheat: Microwave in 30-second intervals or warm in a 300°F oven until heated through.
Add a splash of milk if it thickens too much.
