This Bacon Guacamole Grilled Cheese Sandwich has melted cheese, creamy guacamole, bacon, and a surprise crunch! It is next-level comfort food. A southwest take on a traditional grilled cheese sandwich that will leave you satisfied and full.

Bacon Guacamole Grilled Cheese
This bacon guacamole grilled cheese sandwich is slightly smokey from the bacon and creamy from the guacamole. The crisp, toasty bread makes it a perfect pairing with the gooey cheese.

Ingredients:
- salted butter
- sourdough bread – Any thick bread will work for this sandwich. You want something on the thicker side to support the ingredients.
- Colby jack cheese – Cheddar cheese or sliced cheese instead of shredded would be great (you’ll need about 3 slices of cheese per sandwich).
- guacamole
- bacon – Crumbled bacon or turkey bacon would work great as well.
- tortilla chips
Optional Ingredients
Although this bacon guacamole grilled cheese sandwich is already flavorful and delicious on its own, you could add a few things to take it over the top. Here are a few ideas:
- Mix and match 2 different cheeses. Cheddar and Monterey, pepper jack and cheddar, mozzarella, and cheddar are all great options but use what you have on hand or get creative.
- Add a few dashes of hot sauce on top or mix into the guacamole for a spicy kick.
- Dunk the whole grilled cheese into sour cream for a cool creamy dip.
- Add sliced red onions for extra crunch and flavor.

Instructions:
Preheat. Preheat a skillet over medium heat.
Butter the bread. While the pan heats, butter one side of each slice of bread.


Prepare your bread. Place one side of the bread butter side down on a non-stick clean surface (or in your skillet). Sprinkle half of the cheese onto the unbuttered side of the bread followed by the guacamole, bacon, tortilla chips, the remaining cheese and top with the remaining slice of bread, buttered side up.


Grill. Transfer your sandwich to your skillet and grill until golden brown (about 2-4 minutes.)

Flip and serve. Use a spatula to flip and cook until golden on the opposite side and the cheese is melted. Serve immediately.

Storage
If you have leftover bacon guacamole grilled cheese, you can place it into an airtight container or resealable plastic bag. Store in the refrigerator for 3-4 days.
To reheat, place a pan over medium heat and place the remainder of your sandwich into the pan. Place 2 teaspoons of water into the pan with the sandwich and quickly cover with a lid. Allow the sandwich to steam for about 2 minutes before carefully lifting the lid.
