Ingredients
- 16 ounce container sour cream
- 1 packet Ranch seasoning mix (dry)
- 15 ounce can corn kernels, drained
- 15 ounce can black beans, drained and rinsed
- 10 ounce can Rotel (seasoned diced tomatoes), drained
- 1 cup shredded sharp cheddar cheese
- Optional* sliced green onions or fresh cilantro, for garnish
- Chips or veggies for serving
Instructions
- In a large mixing bowl, blend together sour cream and ranch seasoning until well mixed and creamy.
- Stir in the remaining ingredients until well combined.
- Transfer your fiesta dip to a serving bowl and garnish with green onions.
- Serve immediately with tortilla chips or refrigerate until ready to serve, enjoy!
Notes
- Can be made the night before. Wait until serving to add any garnishes.
- Store leftovers in the refrigerator for up to 3-5 days in a covered container.
- To add a kick of heat to this dish, try adding a dash of cayenne pepper or finely diced jalapeno to the dip.
