Chocolate Chip Cookie Bars

Chocolate Chip Cookie Bars are the best and laziest way to bake chocolate chip cookies!

Equipment

  • mixing bowls
  • Whisk
  • Mixing spoon or electric mixer
  • 8"x8" baking dish
  • parchment paper or non-stick spray

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup brown sugar NOTE: The brown sugar can be substituted with white granulated sugar, or try 1/2 cup white sugar with 1/2 cup brown sugar.
  • ½ cups melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips NOTE: A roughly chopped chocolate bar can be used in place of the chocolate chips.

Instructions
 

  • Preheat the oven to 350°F. Line a square baking dish with parchment paper or prepare with non-stick spray
  • Add the flour and baking powder to a large bowl. Stir to combine and set aside
  • Add the brown sugar, melted butter, eggs, and vanilla extract to another mixing bowl. Mix until well combined. 
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Fold through the milk chocolate chips.
  • Spoon the batter into the prepared baking pan and smooth the surface with a spoon or spatula. Bake in the preheated oven for 20 minutes, or until starting to turn golden and the top has set (the center will still be gooey).
  •  Allow time for chilling in the baking dish completely before removing and slicing.

Notes

These cookie bars also make a great dessert when served warm with a scoop of vanilla ice cream.
Unless serving warm, it’s best to let these cookie bars cool completely in the tin.  The cooler they are, the easier they are to cut.
