Cookie Monster Ice Cream

My Cookie Monster Ice Cream recipe is a cookie lover's dream! This cold, blue, vanilla ice cream is loaded with cookies and chocolate chips!

Equipment

  • Mixing bowl
  • Electric hand or stand mixer with a whisk attachment
  • 9x5 inch baking dish/loaf pan
  • Plastic wrap

Ingredients
  

  • cups heavy whipping cream
  • 14 ounce can sweetened condensed milk
  • 1 teaspoon blue food coloring Either gel or liquid food coloring works.
  • 1 cup crushed Oreos
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup white chocolate chips

Instructions
 

  • In a large bowl or stand mixer, whip the heavy cream until soft peaks begin to form.
  • Once soft peaks begin to form in the cream, gently fold in the sweetened condensed milk and the food coloring until the mixture is homogenous. You want the food coloring to be fully incorporated into the cream.
  • Gently fold in the Oreos and both kinds of chocolate chips until they are evenly distributed throughout the mixture.
  • Pour the ice cream mix into a 9x5 inch baking dish and cover it with plastic wrap. Allow the ice cream to set in the freezer for about 5 hours, or until the top of the ice cream is firm to the touch.
  • Serve and enjoy!

Notes

  • This ice cream can easily be adapted to be gluten-free by using gluten-free Oreos. These can be found at most major grocery stores.
  • You can store this ice cream in the freezer for about a month and a half as long as you keep it covered with plastic wrap to prevent freezer burn.
