  • Non-Stick spray

Ingredients
  

  • 12 large eggs
  • ½ cup milk
  • 3 cups Shredded cheddar cheese (divided)
  • 2 cups chopped Ham
  • Salt and pepper to taste
  • 16 oz Frozen hashbrowns, thawed
  • 4 Diced Tomatoes (divided)
  • 4 Diced Avocados (divided)

Instructions
 

  • Preheat your oven to 375 degrees and grease a 9x13 casserole dish
  • Beat eggs, salt, pepper, and milk until thoroughly combined
  • Stir in the ham and 2 cups of cheese until well mixed
  • Layer your greased casserole dish, start with the hash browns and add half of the diced tomato and half of the diced avocado. It’s ok if your tomatoes and avocado don’t cover your hash browns as long as they are spread out evenly.
  • Pour your egg mixture over the layers
  • Sprinkle the remaining cheese (1 cup) evenly over the dish
  • Bake for 45 minutes or until cooked throughout
  • For the topping, blend the remaining tomato and avocado well and spread over casserole
  • Serve warm 

Notes

Storage Instructions:
-Casserole can be stored in an airtight container for up to 5 days
-Reheat individual servings in microwave or oven as needed
-Baked casserole can be stored in an airtight container in the freezer for up to 3 months and thawed before reheating
