California Roll Cucumber Salad

- 1 large cucumber sliced
- 1 cup imitation crab flake style
- 1 large avocado mashed
- ¼ cup Spicy mayonnaise plus extra for serving
- ¼ cup whipped cream cheese
- 2 tablespoons low-sodium soy sauce
- ¼ teaspoon sesame oil
- 2 tablespoons sesame seeds plus extra for serving
Place the sliced cucumber, imitation crab, mashed avocado, spicy mayonnaise, whipped cream cheese, soy sauce, sesame oil, and sesame seeds into a large mixing bowl.
Gently fold everything together until evenly combined.
Drizzle with additional spicy mayonnaise and sprinkle with extra sesame seeds.
Serve immediately and enjoy!
Storage Instructions:
You can store this California roll cucumber salad in an airtight container in your refrigerator for up to 4 days. I don’t recommend freezing this salad; it loses all of its texture and is watery when thawed.
