Ingredients
  

  • 1 pound lean ground beef
  • ½ cup diced sweet onion
  • 1 ½ Tablespoon Worcestershire sauce
  • ½ Tablespoon light brown sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup Italian breadcrumbs
  • 1 large egg
  • 4 cups prepared mashed potatoes instant or homemade
  • 2 cups shredded Colby-Jack cheese
  • ½ pound bacon cooked and crumbled
  • 1 Tablespoon sliced chives optional garnish

Instructions
 

  • Preheat your oven. Preheat your oven to 400°F and spray an 8x8 baking pan with cooking spray.
  • Make the meatloaf. In a large bowl, add the ground beef, onions, salt, pepper, brown sugar, and Worcestershire sauce and mix until well combined.
  • Add the binder. Add the bread crumbs and egg and continue mixing until the breadcrumbs are evenly distributed through the meat mixture and there are no dry spots.
  • Add the meat to the baking dish. Create an even layer of the meat mixture in the bottom of your prepared baking dish.
  • Layer the mashed potatoes. Cover the meat with a layer of mashed potatoes, being sure to spread it evenly over the top. You can use a rubber or offset spatula to spread the potatoes all the way to the edges of the pan.
  • Cover and bake. Cover with aluminum foil and bake for 30 minutes.
  • Sprinkle with cheese and bacon. Remove from the oven and remove the foil. Sprinkle the cheese and bacon over the mashed potato layer and bake for an additional 10 minutes until the cheese is melted and bubbly.
  • Rest and garish. Let your casserole rest for 5-10 minutes before garnishing with sliced chives.
  • Slice and serve. Slice and serve warm.
