This Raspberry Mojito looks and tastes like summer! With the classic combination of lime and mint with the sweet taste of juicy raspberries.

  • Muddler or wooden spoon
  • Cocktail glass
  • Saucepan

Ingredients
  

Ingredients to Make Mint Simple Syrup

  • 1 cup water
  • 1 cup sugar
  • cup fresh mint roughly chopped

For the Cocktail

  • 6 Raspberries
  • 4 Mint leaves roughly chopped
  • 4 tablespoons Mint Simple Syrup
  • Juice of One Lime
  • 1 ounce White Rum

Garnish Options

  • Fresh Mint leaves
  • Lime Slices
  • Raspberries

How to Make Mint Simple Syrup

  • In a saucepan on medium high heat add sugar, water, and fresh mint.
  • Bring to a simmer, stirring constantly, until sugar dissolves
  • Turn off the heat and set aside to allow to cool completely for 20 minutes

Making the Raspberry Mojito

  • In the bottom of your mojito glass add in lime juice, raspberries, and mint simple syrup
  • Muddle together for 3-4 minutes until fully combined and mint flavor has infused throughout
  • Add in your rum and ice. Stir again
  • Top the remainder of your glass with sparkling water and top with garnishes

Notes

Why mint syrup over simple syrup?
Infusing a simple syrup with mint ensures a stronger mint flavor if desired. You can muddle the mint with the syrup in your glass instead if desired.
