Mini Meatloaf Muffins made in a muffin tin are easy to make and quick to bake, plus the leftovers are delicious!

  • Nonstick spray
  • spoon
  • Muffin pan
  • silicone brush
  • Large mixing bowl

Ingredients
  

  • 2 pounds ground beef
  • 1 egg
  • 1 onion (diced or minced)
  • 1 cup milk
  • 1 cup dried bread crumbs
  • 1 Tablespoon Worcestershire sauce
  • cup ketchup
  • 1 teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • Preheat the oven to 350F.
  • Combine all ingredients except the ketchup in to a large bowl and mix well with hands or a spoon. 
  • Prepare the muffin tin with non-stick spray
  • Press the meat mixture into the muffin tins in equal portions. 
  • Brush the tops with ketchup. 
  • Bake for 30-35 minutes.
