Parchment Paper
- 2 cups All-purpose flour
- ½ cup Cocoa Powder
- 1 teaspoon Pumpkin Pie spice
- ¼ teaspoon Salt
- ⅛ cup Molasses
- ½ cup Unsalted Butter
- ½ cup Granulated Sugar
- 1 egg
- Melting chocolate or candy melts
Preheat your oven to 350° and line your baking tray with parchment paper and keep aside.
In a large bowl, sift the dry ingredients - flour, cocoa powder, pumpkin spice, and salt together; mix, and keep aside.
In a stand mixer (you can also use the hand mixer for this) add in the butter, and sugar and beat it at medium speed, scraping down the sides for at least 2-3 min or until the mixture is creamy.
Add in the eggs and molasses and beat until everything is incorporated well.
Add the flour mixture to the butter mixture in batches and mix till the dough is formed.
Flatten the dough to form a disc, wrap it with a cling wrap, and refrigerate for at least an hour.
Once chilled, roll out the dough on a lightly floured surface to 1/4-inch thickness and cut out shapes using a Christmas tree cookie cutter
Place the cut-outs on the prepared baking tray and bake for at least 12-13 min in a preheated oven.
Let the cookies cool for a few minutes in the baking tray before transferring them to a wire rack to cool completely.
Once they cool down, stick the m&m's as you desire using a little melted white/dark chocolate!
- You can store the cookies in an airtight container for 1-2 days at room temperature or for 3-4 days in the refrigerator.
- Do not bake the cookies with the M&Ms as the colors of m&m's will fade out.
- These cookies are fragile and will break if you try to push the M&Ms inside. So, it’s better to stick them with a little melted chocolate.
- The number of cookies will depend on how thick you roll the dough and the size of your cookie cutter.
