These chocolate chip cookie squares are soft and chewy and full of gooey chocolate made with vanilla, sugar, eggs, and butter. Whip up the cooking dough, toss the dough in a baking dish with parchment paper, and the oven does all the work. Serve with some vanilla ice cream or a big cold glass of milk and you have yourself PERFECTION!

These chocolate chip cookie bars are so easy to make and are perfect for those times you feel like chocolate chip cookies, but can’t be bothered with the effort of scooping and rolling individual cookies. These bars are as simple as mixing the batter and baking for 20 minutes.  No electric mixer is needed for this recipe, simply melt and mix.

Instructions:

1. Preheat the oven to 350°F. Grease or line a square baking dish with parchment paper

2. Add the flour and baking powder to a large bowl. Stir to combine and set aside.

3. Add the brown sugar, melted butter, eggs, and vanilla extract to another mixing bowl. Mix until well combined.

Recipe Tip

The brown sugar can be substituted with white granulated sugar, or try 1/2 cup white sugar with 1/2 cup brown sugar. The flavor will be amazing either way!

4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold through the milk chocolate chips.

5. Spoon the batter into the prepared baking pan and smooth the surface with a spoon or spatula. Bake in the preheated oven for 20 minutes, or until starting to turn golden and the top has set (the center will still be gooey, but don’t worry, this is the perfect texture you want). Allow time for chilling in the baking dish completely before removing and slicing.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup brown sugar NOTE: The brown sugar can be substituted with white granulated sugar, or try 1/2 cup white sugar with 1/2 cup brown sugar.
  • ½ cups melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips NOTE: A roughly chopped chocolate bar can be used in place of the chocolate chips.

Notes

These cookie bars also make a great dessert when served warm with a scoop of vanilla ice cream.
Unless serving warm, it’s best to let these cookie bars cool completely in the tin.  The cooler they are, the easier they are to cut.
