This chicken fajitas casserole is filled with peppers, cheese, and seasonings. If you’re looking to spice up your chicken dinners, this casserole is a great place to start. It’s a perfect meal-prep chicken dinner!

Chicken Fajita Casserole

Ingredients:

  • Shredded chicken
  • Instant rice
  • Cream cheese
  • Sour cream
  • Frozen stir fry vegetables
  • Canned diced tomatoes
  • Chicken broth
  • Fajita or taco seasoning
  • Mexican cheese, shredded

Chicken Fajita Casserole Recipe:

  • Preheat the oven to 350 degrees F. 
  • To a large mixing bowl combine the chicken, rice, stir fry vegetables, diced tomatoes, chicken broth, and fajita seasoning. 
  • Mix in the cream cheese, sour cream, and half of the Mexican cheese. Stir well to combine. 
Casserole Ingredients
  • Pour into a 9×13 casserole dish. 
  • Cover and bake for 35 minutes. 
  • Uncover, sprinkle with remaining Mexican cheese and return to oven for an additional 10 minutes. 
  • Sprinkle with cilantro, more sour cream, salsa, avocado or garnishes of choice.

  1. This turned out horrible. I made it as written and the rice would not completely cook, even after baking 1.5 hours. Why are there no reviews on this recipe?
